Special Instructions

Ca 63, Mg 11, Na 82, Cl 51, SO4 51, HCO 330

Rack onto Mountain Time porter yeast cake

Diffuse pure O2 for 120 seconds

Active fermentation starter 1 hour after pitching at 65F, set temp controller to 65F

Temp ramped evenly to 70F over a week, hold there for 3 weeks

1 lb maple syrup added to primary after 24 hours of active fermentation
8.
add 4 oz whole sumatra dark roast coffee beans (health hutt) for last 2 days
9.
keg with 4 oz. chocolate flavoring
10.
Target moderately low-moderate carb.
11.
Serve at 50F

Notes:

This beer tasted great for quite a while. Coffee, chocolate and maple flavor were all noticeable and cohesive. Maple was the least prominent but was a thread throughout the flavor. Chocolate was quite noticeable and coffee was prominent at first but later equaled the chocolate. Nothing was overpowering, the base beer flavors came through mildly and alcohol was super smooth. Very drinkable. There was an odd off flavor before packaging and here and there during service maybe butyric? Kind of diarrhea-ish. Huh. I remember it from the RyePA as well, both batches were pitched onto full yeast cakes. Probably some sort of contamination but honestly it's almost not even noticeable. Maybe try just pitching from a starter next time.

Notes:

Ho. Lee. Chit. This is it, boys and girls. By far the best stout I've made. Like cold cappuccino. Luscious, velvety, full body, bitter sweet, finishing dry enough to not be syrupy/cloying. Awesome beer.
