RO water plus calcium chloride and Gypsum. For 5 gals add: Mash : 2 grams calcium chloride , 3 grams Gypsum Sparge : 3 grams calcium chloride , 4.5 grams Gypsum

Add Oxygen to wort before pitching

Hold fermenter temperature at 70F until it your fermentation is rolling
7.
Drop fermenter temperature to 60F.

Notes:

hoppyness seems right on the money this time. not overly sweet, some yeasty almost soapy flavors though that I think will clear up in secondary.

    Pitched yeast @ 01:00. Checked this morning (09:00), it's slowly starting to ferment, not active yet. Holding at 70F until 17:00 today.

    Primary Fermentation for 9 days. Started at 70F on day 1 to kickstart, then dropped to 60F. WLP029 was fermenting but seemed to be struggling. Fermentation slowed way too much. Bumped up to 66F for the last 4 days and it started picking up steam again. Refractometer shows 2.74 °P which puts SG at 1.011. 5.05% ABV.

    (Added about 4ml of biofine clear to my secondary fermenter, then transferred. Brew is now sitting in secondary fermentation at 59-61F.)
