2 yeast packets are needed for 4 liters of starter Strike water is 9.5 gallons - actually do 10 gallons and transfer whats needed Strike water is to be at 168 degrees What temp is grain held at???? Mash at 152 degrees for 60 min Sparge water is 7 gallons Sparge water is to be at 168 degrees Sparge for 45 min 12.5 gallons is the pre boil amount needed 1.060 is the pre boil gravity Boil for 60 min brown sugar at flame out OG Gravity should be 1.081 Ferment for 14 days 10 vanilla beans bring to boil for 30 min. add to secondary and let sit nutmeg and bring to boil for 30 min, add to third set

Notes:

coffee flavor was gone. taste was good. needed more cinn. DEF use better quality cinn. tasted after 3 days in secondary. added 1 more oz of cinn. will continue to let set

still no coffee flavor which is good. i picked up some bitter taste- i beleive it came from the oranges. so dont do any oranges next year. def do better quality cinn. could use a little more vanilla .... try 3 beans next year.

Fermented for 10 days - tasted and kind of thought there could be too much coffee flavor- will wait till after secondary

Might no be enough room in the fermenter for the whole 15 gallons - Can tweak the vanilla and cinnamon - can tweak the hops , dont want it too bitter, going for more sweet
