A perfectly balanced, malty brown ale well suited for bringing in the warming of late spring and early summer. This full bodied dark brown is darker than a traditional English brown ale, less sweet and has just the right amount of bitterness. If you've enjoyed New Castle or Smithwicks but wanted something maltier and with more body, then this beer is for you. I designed this recipe to satisfy the beer tastes of my wife and she was quite pleased with the result..

Pitch Yeast Starter (use Wheat DME for Yeast Starter)

Add Clarity Ferm (clarifies beer and reduces gluten content)

Ferment at 68F to 70F for 2 Weeks

No need to rack to secondary

Notes:

Dark brown, 1/8 inch white foamy head, cloudy Malty, not much else Nutty, hay, hints of chocolate, slightly sweet, very mild bitterness, perfect balance Full bodied, medium carbonation This is by far the best brown ale I have brewed and quite possibly the best beer I have brewed. The wife is quite pleased with how it turned out also.

Notes:

Slight cloudiness, medium deep brown color, and no head. Malty and yeasty Slightly sweet, roasty, chocolate and hint of yeast. Very full body with no carbonation. This was a taste from a sample taken to get a hydrometer reading. At this stage, almost ready to bottle, the beer tastes great and has a lot of promise. I can't wait to condition and try the finished product.

    Thanks! It has been very very tasty thus far. If I was brewing it again today I would add a little victory or biscuit to try and bring out a bready flavor. I think it would really add to the beer.

    I ended up making this again, Brown Moose Ale v2. I didn't end up adding victory or biscuit malt, but I did change the hop bill, moving the majority of the hops to the last 15 minutes, and boy did it make the difference.
