I'll try making a graff, which I understand to be a mix of wort and apple juice that is fermented. Let's see what happens.
The apple cider that I purchased identified 26g of sugar per 8 fl oz, so it's 448g of sugar per gallon. In 3 gallons, that equates to 2.76lb. Yeast pitch is 200mL.
The wort will be no sparge, so there'll be an efficiency dip.

1.Mash 3.5 gallons of water with 0.88g gypsum, 0.88g CaCl, 0.53g salt, and 2.0mL lactic
2.Add 2.2g of yeast nutrient with 15 minutes of boil to go
3.Add coriander, wait a couple of minutes, and then add apple juice at end of boil
4.Oxygenate for 1.5 minutes
5.Pitch 200mL of desired yeast
6.Consider adding cinnamon tincture during bottling
