My first attempt at my favorite style. I tried to emulate the flavors of cask conditioning with oak chips. Planning the brewday for mid-April.

Special Instructions

1.
Add 9.75 liters of 162°F water (treated with 1/2 tsp gypsum) for Single Infusion Mash at 150°F for 75 minutes.
2.
Sparge with about 3 gallons 168°F water.
3.
Add Irish Moss, and DME at 10 minutes left in the boil.
4.
Ferment 7 days in primary.
5.
Soak Oak Cubes in bourbon or whiskey overnight, add to secondary fermenter, then rack beer onto them.
6.
Secondary 4 days (or to desired oak taste).
7.
Bottle with 1.8 ounces DME. Condition for about 4 weeks.
