My mash/lauter tun is only 5 gal, so there's not room to infuse up to the desired temps - so I'll have to direct heat and cover for mashing, then scoop into my lauter tun for sparging.

Special Instructions
1.Heat 4 1/2 gallons of water to ~128.5 degrees F
2.Add grain, wait ~15 minutes
3.Heat to ~145 degrees F, cover, wait ~30 minutes
4.Heat to ~160 degrees F, cover, wait ~30 minutes
5.Transfer to lauter tun, sparge.
6.Add 1# sugar at end of boil (in grain bag so it doesn't burn), 1# in 2 cups water after 2 days.
7.After ~2 days of fermentation, dissolve 1# sugar in 2 cups water and add.
