Special Instructions

1.
Boil 2 Gallons of extra water early so it will cool off (in small kettle)
2.
Heat 4 Gallons of Strike water to 165deg (Heat the tun with the warm water)
3.
Pour into Tun and Mix in Grains.

Check PH and adjust
5.
Let Mash for 60 Mins @ 153deg
6.
Heat 5 Gallons to HLT almost boiling. (sparge water)
7.
Check for iodine test throughout mash
8.
Batch sparge until wort is clear
9.
Fly sparge from what's left in HLT and collect in Big Kettle
10.
Add more water to get to 6.5 Gallons
11.
Check Pre-Boil Gravity
12.
Boil for 60 mins and add DME 1LB
13.
Add 2 tsp gypsum, bittering hops @ 45 mins left
14.
Add flavoring hops @ 30 mins left
15.
Check Post-Boil Gravity
16.
Top off with cooled water if necessary to get to 5.5 Gallons
17.
Pour into Fermentor
18.
Add 1 min of oxygen at 1psi
19.
Pitch yeast starter

Notes:

A bit nutty.. not sure if I would say it tastes like an "Irish red". Good color. 6% ABV at bottling. I get a "refreshing" quality about it.

Notes:

phenomenal. Even out of primary and into secondary it tastes excellent. 1.010SG at transfer and even has effervescence. Cant wait until it bottle conditions.
