Special Instructions

Mash in with 4 gallons at 163 to reach mash temp of 152...hold for 60 minutes

Sparge with 3.2 gallons at 170 to collect 6 gallons

Boil for 60 minutes following hop schedule

Cool to 68 degrees, aerate and pitch yeast
5.
Ferment at 68 degrees to completion. Cold Crash to 35 degrees and keg.

Notes:

Kegged on 5/15, so almost ten days from legging to tasting. SOme cloudiness, nice light head and residual carbonation. Spicy, with a nice dry finish. Very happy with this one.
