obtain minimum of 1.040-1.044 in fermenter to result in around 5% ABV (expect around 1.004 FG). Got 1.002 with similar pilsner recipe using AE and US05 yeast. Should get down to at least 1.006 with this yeast without AE while mashing at 150. Update: did get down to 1.002!

Special Instructions

1.
prepare a yeast starter to ensure rapid fermentation at cool end of temp range
2.
Mash at 149 for 90 minutes
3.
Sparge with 170-180F until 7.3 gallons collected in kettle.
4.
boil for 90 minutes, begin hop schedule at 60 minutes
5.
Ferment 14-21 days at 62-65 degrees,
6.
rack to secondary for 14-21 days at 60-65F
7.
carbonate at 2.7 vol

Notes:

Fresh, Clean flavor after cold aging. Wheat comes through and adds sweet aftertaste. Darker color than expected looks like a dark cream soda near yuengling color, but not the clarity due to wheat proteins most likely.

Notes:

About 2 weeks post-bottling and not quite fully carbed. slightly spicy. Will require some aging, but even without, this turned out very crisp, flavorful and balanced. it will appeal to a wide range of tastes.

Notes:

Tasted while bottling. Crisp, fruity and spicy. I can't believe how much favor this has for being so dry and with relatively little hops.

Notes:

Racked to secondary. Took a taste. Very similar to a stellar type brew. Turning out great! Will wash the yeast and brew this again. No changes necessary.
