Notes:

Compared directly to the real Rochefort 10. Almost identical colour, but clearer, possibly due to cleaning up from secondary ferment, and no yeast added to the bottle. Thin head, very slight carbonation, needs more time in the bottle. Prune, raisin, slight coffee & biscuit. Port wine - dried fruit (plum, raisin, fig), fades to spice, dark chocolate, coffee and biscuit. Compared to the real thing, a little bit sweeter and less earthy. Should dry out after longer in the bottle, but would probably increase the late hops next time for more complexity. Minimal carbonation, very smooth, almost syrupy. Mild alcohol warmth belying its 10.8%. In direct comparison to Rochefort 10, this is about 90% there. Without directly comparing, you'd think you were drinking the real thing. Cannot believe we brewed this.
