158 Strike, 152 Mash in. Cold wind knocked out down to 144 by the end. Spilled some grain, but got most of it recovered. Two drops of defoamer and nice rolling boil. Bitterness could be an issue due to the hopstand at the higher temp (hops went on right at flameout). 3.4 gallons post mash. 3.25ish gallons post boil, maybe a touch less. 0.75 left in the kettle means about 2.5 in the fermenter. Took about 12m to cool to 100 degrees. Sprinkle yeast, first ferm hops went on top of the wort. Cold Crash for two days. Tastes intense, some onion and garlic, very clean, neat malt note toward the finish, nice balance. Kegging went perfectly, used a strainer bag and it picked a little bit up. The siphon was straight on the point on the bottom and worked perfect, not sure why I didn't realize that sooner! Straight up cloudy. 10 days in the keg and this thing is a beast, conditioning well, getting more balanced. Overall this beer was amazing and really settled into itself by the end. Very good citrus nose, smelled amazing until the end, balanced enough, the sacchra was solid. The onion thing was gona after a week. One of the better things I've made.
