I let it mellow for a week more and this is by far my best beer to date. Very tasty and strong. Perfect way to end an evening. I would definitely make it again next year, and have it ready for Christmas for everyone to enjoy.
Dark and spicy notes. Very flavorful, Christmas type ale. There is a slight bitterness / bite from the dark roasted malts. I might cut back on these a bit in the future.
