BRIGHTENED UP AFTER A WEEK IN THE KEG. NICE ORANGEY YELLOW COLOR THE CASCADE SHINES THROUGH WITH A NICE BOUQUET OF CITRUS AND ESTER DRIVEN AROMA. IT SEEMED THE 565 YEAST WAS MORE DOMINANT THOUGH IT SEEMS AS IF THE YEASTS WERE WORKING AGAINST THEMSELVES. SLIGHTLY UNBALANCED. BUT ONLY NOTICABLE TO A TRAINED PALATE NICE RESIDUAL SUGAR, YET NOT TOO HEAVY OF A BODY. JUST RIGHT FOR HOW HIGH THE ABV IS. I'D LIKE TO DO THIS AGAIN WITH ONLY ABBEY AND SAISON YEAST. I WASNT TOO IMPRESSED WITH THE PLATINUM ABBEY...I THINK THAT PARTICULAR STRAIN IS WHAT HINDERED THE BEER
Its at the end of the keg and has cleared up a whole lot. Lost some body too. Its almost like it watered down even though thats impossible! Clean with subtle esters Belgian candi does this beer good! About .14 in body. But its .16. ....quite weird that the beer thinned right before running out. I love this beer. My fav big beer recipe right now for sure. A sense of pride is had from creating recipes and belgian candinfrom scratch. Love the flavors!
srm is spot on. nice orange hue aromatic and belgian candi melds nicely with the abbey yeast. not too estery, smells slightly sweet slightly sweet, but nice hop bitterness to balance. goes down smooth. no hint of alcohol. very scary! rich body. even telegraph brew co's sour brewer paul was impressed with it. i liet it finish at 1.016 to keep the body, i will brew again, maybe with wlp530 & wlp565 mixed! i really liked this beer, one of my best big belgian beers for sure
