Special Instructions

1.
Strike water - 1.5 gallons to 167F - mash in and hold 154F for 50 minutes
2.
Add 1.5 quarts water at 212 degrees - hold at 163F for 20 minutes
3.
Sparge with 2 gallons water at 212 degrees - hold at 172 for 10 minutes
4.
Boil 60 minutes
5.
Add Saphir hops at boil
6.
Add licorice root and Juniper berries at 45 minutes of boil
7.
Add Herbsbrucker hops at 55 minutes of boil
8.
After one week in fermenter, move to secondary and add prepared cherries (pitted, frozen, then boiled in a bag)

Notes:

The Nectar yeast is fairly slow working. Really got going after 48hrs and took almost two weeks to clean up. Bottle conditions for three weeks and chilled for about a month. This tasted great. Fruity and sour, but with a nice malt finish. I will simplify the malt bill and try it again soon.
