Special Instructions

1.
Do not rehydrate yeast. Kveik yeast is more productive when pitched dry.
2.
Bring 3 gallons of water to 160 deg; stir in and fully dissolve 0.5 lb DME and steep flaked wheat for 45 minutes.
3.
Stir in and fully dissolve all extract(s).
4.
Bring to boil; start :60 timer & follow hops schedule.
5.
At :15 add the Irish Moss.
6.
At :15 carefully place the cleaned & drained immersion chiller into the brew pot to sterilize.
7.
At flame-out, add cold water to bring wort volume to 5.25 gallons.
8.
Chill/rack wort to primary at 80 deg.
9.
Add dry hops.
10.
Pitch yeast; primary at 80-90 deg for 2-3 days until fermentation is complete.
11.
No need for secondary. Bottle when primary fermentation is complete.
12.
For bottling: Add 4.5 oz corn sugar to 2 cups water & boil for 5 min. Chill to room temp.
13.
Bottle & condition at 80-90 deg for 3-4 days.
