Mash Steps

Special Instructions

1.
Bring 4 gallons of water to boil.
2.
Remove heat; stir in & fully dissolve all extract(s).
3.
Bring to boil; start :60 timer & follow hops schedule.
4.
Add Irish Moss at :15
5.
At flame-out, add cold water to bring wort volume to 5.5 gallons.
6.
Chill/rack wort to primary at 70 deg.
7.
Pitch yeast; primary at 68-70 deg until fermentation starts.
8.
When fermantation has started at room temp, primary at 58-62 deg for 2 weeks.
9.
After 2 weeks in primary, rack to secondary at 58-62 deg. Allow 2-3 weeks in secondary.
10.
For bottling: Add 4.5 oz corn sugar to 1 cup water & boil for 5 min. Chill to room temp.
11.
Bottle & condition at 62 deg for 2-3 weeks.
