Redo of E-Fowty with removal of Mosaic hops. Going to experiment with brewing a concentrated wort and adding 1 gal of water to the end of the boil to both cool wort and increase volume to 3 gals. Recipe will be based off of 3 gals for the mash as a concentrate but use the amount of water for a 2 gal batch. Adjustments will be made in brewgr.com software as a reference point. Brewed Quarter Chub V2 w/ Mosaic at 1 gallon AND QChub V2 Mosaic/Galaxy together using the same mash. The following info for mash is the same for both recipes. Everything went very well, boiled at different times but accounted for that in the additions of hops. Got a good hot break and cold break. Vigorous boil in both kettles. Adjusted recipe calculations below by removing rice hulls to get normal, working fermentables at the correct percentage. Then did the same for hops by adding 10% at 60min, 20% at 20 and 10min Getting extremely low efficiency for starting gravity. Need to sparge much slower. Also collected too much wort. Need to subtract about 0.4 gals from the sparge volume as this was how much liquid remained in the mash tun after collecting the proper amount in kettle. Forgot to measure starting gravity ...

Strike temp at 164.1 Mash temp measured at 152.4 Leaving for 45mins to mash, stirred, measured the temp and it was 150F, added about 4 cups of boiling water to get back to about 152F. Leave for another 45 mins and begin sparging with 195 water. OG = 1.080 after adding about 0.27gal of the baby beer brewed with mosaic and random hop for 60 min boil FG = 1.036 OG of baby beer = 1.044 FG of baby = 1.022...Not very fermentable (Used about 1/4 bag of yeast)

Sparged at 172F so that there is always 1inch of wort above the grain bed. Lautering should happen at 1qt/min. Brewed on 1/29/17 Lautering went OK, definitely need to work on this. Did a nice, slow sparge, not sure of the flowrate. Got a decent amount of grains to come through though, very hard to keep an inch of wort above grain at all times. Sent the collected wort in kettle through a screen to remove excess grains. Got a slightly stuck sparge as well, might consider adding some rice ...

Mashing at lower temps (149) to produce crisper flavors and mouth feel. Sparged at 185 and resulted in 166F mash temp. Need 190F Sparge temp. Probably going to need to add lactic acid to bring sour flavor. Acidulated malt was supposed to do the same, but should be used in 20-50% of grist. Only used about 25% and did not have a very sour flavor come through. Did not test mash PH though. Got a stuck sparge, need to increase the amount of rice hulls.

Checked temps after mash and they were down to 147F max after mixing. Definitely need to heat 3 gals of water for cooler preheating. Sparge water brought to 185F. After adding to grains, temp was 160F. After adding the lactose and cacao powder, there was a slight boil over after adding lid partially in order to conserve liquid. Boil is not vigorous at max temp. Covered slightly for the last 15 mins and bumped up to a 70 min boil. Need to boil for 90 mins to get same efficiency. Cooling was slow, took close to an hour to cool to 83F. Left the beer on the trub for 3 weeks, should have removed it right when fermentation was done to prevent autolysis. 1.064 Original gravity, created on 11/19/16 and finished at 2am :), after 7 days the FG was measured at 1.024 so I gave it a swirl, tastes great so hopefully it will ferment a little more, next time might add a bit of caramel malt to increase fermentable sugars.
