(Temporary Instructions - under construction) Mash in at 148° to 152°.....strike water temp should be 11–13 degrees over to account for grain temps...... and hold for 60 minutes. Sparge at 168° to 170°.....NOT ABOVE, to avoid leaching tannin. Boil for 90 minutes. Ferment at 45°-50° for three weeks, then keg and add gelatin to clarify. Lager at 40° for 3-6 weeks.
