This uses a west coast Pale Ale kit from Oak Barrel in Berkeley as a base. DIRECTIONS: 1. Steep grains at 165F for 60 minutes. Sparge rinse grains for 5-10 minutes (hot water/wort). 2. Boil for 60 minute schedule. This recipe calls for adding the DME and corn sugar first, then LME and homey as late additions (at 15 minutes before end of boil, along with whirlfloc tablet). 3. Add Millennium hops at start of boil (60), Willamette about halfway (30), and Cascade near end of boil (5-10 minutes before end of boil). 4. During the boil, boil 3 C. H2O for yeast; 1 cup in small bowl is for hydration, 2 cups with 4 T. honey for feeding yeast. When water temp. is 75-80, add yeast packet to small bowl, wait 15 min. Then transfer contents to larger bowl with 2 T. honey. Set aside for pitching. 5. Cool wort to 75F, then transfer to carboy/fermentor. Take your hydrometer reading to get Original Gravity (OG). 6. Pitch yeast, add airlock.

    Also - check IBUs - I find it hard to believe the 60 IBU number from less than 3 oz. of hops.
