Mash Steps

Special Instructions

1.
Mash @ 145F for 30 min
2.
Slowly raise temp to 160F over 15-20 min
3.
Mash @ 160F for 15 min
4.
Sparge @ 160 (SLOW RUN OFF) (Collect 6.5 gallons of wort)
5.
Boil for 60 minutes - Add hops per Schedule (60, 45, 15, 0)
6.
Add 1 tsp Irish moss and Yeast Nutrient at 15 min
7.
At Flameout - add whirlpool hops
8.
At Flameout - add 1oz lemon peel
9.
At Flameout - Whirlpool beer
10.
Let stand for 30 minutes
11.
Chill Beer to 52F and transfer to Fermentor
12.
Place Fermentor in Fridge and chill to 52F
13.
Pitch a double batch of lager yeast , and ferment @ 52F for 10 days or SP hits 1.016 (4dgP)
14.
Allow temp to rise to 58F and hold for 4 days
15.
Rack beer in CO2 Keg and Cool by 3F per day until 32F
16.
Hold @ 32F for 4 weeks - Then force carbonate
