Ca 71, Mg 11, Na 11, Cl 61, SO4 57, HCO 65

Diffuse pure O2 for 60 seconds

Pitch 1 package US-05 and contents of 1 capsule of Swanson's L. Plantarum

Set temp controller to 65F

Hold at 65F straight through primary, 2 weeks

Checked acidity after 3 days in primary and it was good.

Prepared hop tea with hops listed, boiled in 500ml water for 15 minutes

Chilled and added to primary

Crashed to 45F last day and racked to keg

Notes:

Seriously great stuff. Perfect acidity: distinctly tart but not sour. Light esters in aroma and flavor, (strawberry, apple, slight tropical like pineapple.) Love.
