Special Instructions
1.Steep mash at 130F for 15 minutes
2.Mash at 155F for 60 minutes
3.Mash at 168 for 5 minutes
4.Fly sparge at 180 until preboil gravity 1.051 is reached or 9 gallons
5.Boil for 20 minutes, cool to 90F, leave in boil kettle (110F)
6.Add lactobacillus about 50 million active cultures (10 million per capsule of goodbelly)
7.Allow to acidify to 3.45-3.5, about 36 hours, holding at 90F
8.Gravity should remain unchanged at ~1.051
9.after pH has been reached, boil for 90 minutes
10.Add hops at 30 minutes into boil
11.Boil until gravity is ~1.035, may need to add pure water that will not adjust pH
12.Cool wort to 65F, oxygenate, pitch yeast.
13.Ferment at 65F for 5-7 days
14.Cold crash to 50F for 2 days
15.Should reach FG 0f 1.006 and final pH of 3.25 to 3.35 (this is an interesting goal)
16.Keg, carbonate, enjoy,
17.At serving, add fruity syrups to make it interesting.
