Special Instructions

1.
Ca 92, Mg 11, Na 11, SO4 80, Cl 80, HCO 73

Added 3 ml lactic acid, 2.7 g gypsum and 4.1 g cacl to strike water

Mashed pale grains separately @ 1.7 qt water/ lb grist

Ground roasted barley to a powder in food processor

Added to mash during last 5 minutes in BIAB, (don't do bag next time, gets in the way.)

Batch sparge at 160ishF
7.
Add wort chiller, whirlfloc and re-hydrated yeast nutrient at 10 minutes left in the boil
8.
Chill to 62F, diffuse pure O2 for 60 seconds
9.
decant most of liquid from cold crashed starter, pitch slurry
10.
Set in fermentor at 62F
11.
Hold at 62F for 24 hours then ramp temp 1F every 12 hours to 68F
12.
Hold at 68F for 13 days, cold crash to 45F 1 day, rack to keg
13.
Force carb, (50 psi, shake keg 60 seconds. Did this 3 times, carb is a bit too high.)

Notes:

Aroma: Moderate malt, (unsweetened dark chocolate, coffee, light malt sweetness.) No hops or esters, clean. No diacetyl. Appearance: Black with ruby edges when held to light. Thick, creamy light tan head with good persistence. Crystal clear. Flavor: Moderately high malt, (dark roasted coffee, dark, unsweetened chocolate, toasty.) Medium high hop bitterness. Bitter in balance with a very dry, roasty finish. No hops, esters or alcohol, clean. Aftertaste of roasted malt. Mouthfeel: Medium body, smooth & creamy. Medium low carbonation. Med. low roast derived astringency, no alcohol. Overall Impression: Dry, bitter, roasty and true to style. Very drinkable, could reduce hop bitterness a bit and maybe have just a slight amount of malt sweetness if I'm being picky, if not it's perfect.
