adapted the original aces wild to include a bit of homegrown hops as bittering and move some of the SA to the back end hoping to smooth out the flavor profile. Used what leftover minute rice and quick oats i had in the pantry. With a fresh pack of US05 and mashing around 150, should end up around 5.7-8 ABV.

Special Instructions

1.
add 1/4 campden tablet per 5 gallons mash/sparge water to remove chlorine from tap water
2.
Mash at 154 for 90 minutes

Sparge with 170-180F until 7.2 gallons collected in kettle.
4.
Ferment 5-7 days at mid 60's, slowly raise to 70-74 for final 1-2 weeks.
5.
cold crash and rack to secondary or keg and allow to finish at room temps 14-21 days
6.
carbonate at 2.5 vol

Notes:

Tastes great after aging in the garage until spring. Tastes like a japanese beer like asahi dry. Would brew again as is. Better than the original, but requires plenty of time in secondary.

Notes:

Tasted when done fermenting. Medium straw color, with a tad of haze and a bit of alcohol flavor (reminiscent of a bourbon) that should dissipate after some cold aging. Starts with some mild citrus hints on top of the mild sweet maltiness, but the spiciness from the Sorachi Ace follows quickly with a dry finish. Surprised at the complex flavor profile.

Notes:

okay, this one ended up lacking body and has a yeasty almost tinny flavor after aging for a bit. was better fresh. wouldn't brew this again without making some adjustments.
