This recipe was formulated to explore the flavor imparted by the sorachi ace hops. i thought the spicy character would pair well with a hint of rye, but other than that, i wanted a rather clean malt profile and no other hops adding to flavor profile of the recipe. Used just a small portion of hops for bittering, with a moderate dose for flavor and aroma, but not too much as to be overpowering as this is my first time using sorachi ace hops. I also wanted to keep the IBU within Blonde Ale style limits so this would likely appeal to the average beer drinker.

Special Instructions

1.
add 1/4 campden tablet per 5 gallons mash/sparge water to remove chlorine from tap water
2.
Mash at 151 for 90 minutes
3.
Sparge with 170-180F until 7.2 gallons collected in kettle.
4.
Ferment 5-7 days at mid 60's, slowly raise to 70-74 for final 1-2 weeks.

cold crash and rack to secondary or keg and allow to finish at room temps 14-21 days
6.
carbonate at 2.5 vol

Notes:

Slight bitter start, mild sweet finish. Has a flavor reminiscent of Sapporo albeit with a bit more hops flavor to it. If I were to brew again, i'd use half the bittering hops at 60. could put more toward the end keeping the same total hops but reducing the IBUs.
