Strike at 158.5, mash at 147 for 1 hour.

Use 0.5lbs each of Flaked Rye, Spelt, Kamut and Kasha

Notes:

Non-sour'd version, 51 days after bottling, 50 of them spent at 68F conditioning and 1 in the fridge. It's fairly cloudy, might need some more chill-time. A thin and fizzy white head is still present and the aroma seems stronger. The flavour is really enjoyable now, better than before in a sort of more cohesive sense. A solid 4.3/5 on RateBeer.

Notes:

A birthday treat in my Tulip glass. This is the non-sour'd batch, 22 days after bottling. Getting better and more carbonated as time goes on, some light grainy tartness and really quite dry and refreshing. I can't notice that this is almost 8%ABV.

Notes:

In my Tulip glass, 16 days after bottling. Sour'd version. The same mostly clear golden blonde with a foamy white head that laces handsomely. This version shares all the same aromas but with a tart yogurt funk in there as well. One sip reveals a slightly funky, sour citrus and tart green apple (too early for sampling?) flavour mixed well with nutty, grainy, honey and cereal notes. A mildly acidic tang is left in my mouth. I am going to let this baby sit awhile and then check it out again in two weeks.

Notes:

In my Tulip Glass from 22oz Bomber. 13 days after bottling. Non-Sour'd batch. Beautiful clear golden blonde with a crisp white head leaving lovely lacing. Notes of pepper, honey, light funk, cereal and light bubblegum usher forth. The flavour is interesting, somewhat sweet but also fairly spicy with distinct grainy flavours melding well. The body is nice and dry, quite refreshing but it also has some fullness to it which is odd for the 1.004 FG. This is a damn tasty beer, it needs to carbonate more but once it does it is definitely a keeper in the stable.
