Mash Steps

Special Instructions

1.
After mash is done recirculate wort for 30 minutes
2.
After 30 minute re-circulation transfer wort to brew kettle
3.
Fill brew kettle to 16.5 barrels
4.
This transfer can take 3 to 4 hours
5.
Boil wort for 60 minutes
6.
Once boil is done rest wort fro 10 minutes
7.
Then whirlpool the wort for 10 minutes
8.
After whirlpool rest wort for 10 minutes
9.
While wort is going through rest periods add yeast to fermenter
10.
Transfer wort thru heat exchanger at 68 F and aerate to fermenter
11.
This will take 3 to 4 hours
12.
Set temperature of fermenter to 68 F
13.
Ferment at 68 F for 10 days
14.
Turn temp down to 40 F after the 10 days for 4 days
15.
Transfer beer after fermentation to bright tank
16.
Carbonate for 8 hours to 2.50 volume of CO2
17.
Age beer for a week
18.
After a week the beer can be served or kegged off
