Adapted from Kick Axe. Use homegrown whole cascade hops if you have them. This recipe is intended to appeal to the masses (to supply a work-related party) so I wanted to ensure something flavorful, but not bitter or too likely to limit the appeal to any particular style of beer drinker. The Rye should add enough spicy character to balance the minimal floral and citrus hops flavors and aromas.

Special Instructions

1.
prepare a yeast starter to ensure rapid fermentation at cool end of temp range
2.
add 1/4 campden tablet per 5 gallons mash/sparge water to remove chlorine from tap water
3.
Mash at 149 for 90 minutes (or start at 151 and leave overnight)
4.
Sparge with 170-180F until 7.2 gallons collected in kettle.
5.
boil for 90 minutes, begin hop schedule at 60 minutes
6.
Ferment 14-21 days at mid 60's,
7.
cold crash and rack to secondary or keg and hold mid 60's F for 14-21 days
8.
carbonate at 2.7 vol

Notes:

Well balanced general style of beer that went over very well at a party. Non-craft drinkers liked the flavor. Not bitter, but has some detectable fruity aftertastes and aroma (mainly mild citrus: toward an orangy, mild grapefruit), but not enough to be overpowering. Slightly sweet start, with some bready malt character underlying. Definitely a recommended brew for sharing with the general public.
