Special Instructions

1.
Mix DME up 1lb in 100deg. water
2.
Hydrate Yeast (boil some water to sanitize put into small jar when it cools down mix yeast in)
3.
Heat 3.85 Gallons of Strike water to 167deg (Heat the tun with the warm water)
4.
Pour into Tun and Mix in Grains.
5.
Check PH and adjust
6.
Let Mash for 60 Mins @ 154deg
7.
Heat 5.25 Gallons to HLT almost boiling. (sparge water)
8.
Check for iodine test throughout mash
9.
Batch sparge until wort is clear
10.
Fly sparge from what's left in HLT and collect in Big Kettle
11.
Add DME from Erlenmeyer flask
12.
Check Pre-Boil Gravity
13.
Boil for 60 mins adding Hops @30 min mark
14.
Add adjuncts/cranberry @ 15 min left and put chiller in wort.
15.
cool the wort down
16.
While cooling make sure all is sanitized
17.
Top off with cooled water if necessary to get to 5.5 Gallons
18.
Pour into Fermentor
19.
Check Post-Boil Gravity
20.
Add 1 min of oxygen at 1psi
21.
Pitch yeast

Notes:

I'm putting it into tertiary fermentation. Its been a month since secondary and it hasn't stopped fermenting because of the 16oz of cranberries. It's now 1.012 after fermenting for a month with 16oz of dried trader joes cranberries. It tastes really good. a bit on the light side. I did top off before putting into secondary with about 1/2 gallon of water into glass carboy so this is probably why.

Notes:

Putting into tertiary fermentation. Very fruity. Excellent light beer. 1.012 abv after adding the extra cfranberries and topping off w/ water

Notes:

Put into secondary fermentation with 16oz of dried cranberries. This will be a fruitful beer I think. I tastes a bit alcoholy right now. It's currently at 1.010 indicating 7.35% abv
