Chilled beer to 54°, shook the crap out of it, poured in 24hr yeast starter, moved downstairs at 50°F. Plan to keg toward end of March.
*** All gravity readings after fermentation began are off due to lack of refractometer reading conversion ***
2 MONTHS:
SG: 1.040. Tastes awesome. Caramel, toffee, almost a hint of dark chocolate. Transferring to secondary. Hoping it might boost a secondary fermentation and get it closer to FG.
3 MONTHS:
SG: 1.038. Still tastes great. It's been lagering around 46°F for the past month. Moved upstairs for a couple days for a diacetyl rest. Stirred up yeast on bottom and added half a pack of S-04. Trying anything I can to get the gravity down. Presently stuck at only 3.5% ABV.
