My system is kinda the same as big rob only I modified mine to be a all in one biab, I double mill my grains @ .025 ( I use a brew bag) and my mash ratio is 2qt per pound , 6gl for this recipe, i only sparge enough to get me at level that will get me to post boil of 5 3/4 gallon, I have a boil off rate of 1 gallon every 90 minutes, whirfloc and yeast nutrient at 10 minutes left in boil and before I forget k-97 works best with this but Nottingham I like also k-97 is a little more crisp i find but this is pretty much higher gravity and Nottingham wont stress, when i used k97 it worked fine also with no noticeable off flavors, i ferment @ 66f for 10 to 12 days until i reach 1.010fg then cold crash 3 days @ 34f then keg, force carb, let it rest 2 to 7 days depending on how thirsty i am lol
