Yeast: 3068 - Nov 15 Changes from last brew: 1) Maybe build up a 200 - 250 B cell starter and split in half to pitch about 100 to 125 B cells. Actually, maybe try for 300 and split into 3 diff sizes: 80, 100, 120, etc. to account for viability of stored starters. 2) This batch I will only O2 for 30 seconds and pitch/start at 66 and rise to 69/70 ish. NOTE 1: Really wanted to try Weyerman Dark Wheat Malt (6 to 8 L) (https://www.morebeer.com/products/weyermann-dark-wheat.html) but they are out of stock now. NOTE 2: Normally just a 60 min Hallertau. However, I want to use NZ hops so I'm using Pacifica for bitter and some late flavor. Last brew was very good with 18 brewgr IBU as follows: Pacifica 1 oz - 55 min Hallertau Mitter .5 oz - 10 min Pacifica .3 oz - flameout (Only did 5 min Hop Stand last time.) NOTE 3: Per last Dunkel Brew session results next time I had Wheat at 36 (def 40). I was .003 over so bump up to 38 this time.

Protein rest at 133 if using German (i.e. not fully modified) wheat malt.

Pitch at 64 or 65 and let rise to 68.

Go for 10 min HopStand/Whirpool ( temp will drop to 180 ish )

Carbonate at 2.5 to 3
