Yeast: 3068 - Nov 15
Changes from last brew:
1) Maybe build up a 200 - 250 B cell starter and split in half to pitch about 100 to 125 B cells. Actually, maybe try for 300 and split into 3 diff sizes: 80, 100, 120, etc. to account for viability of stored starters.
2) This batch I will only O2 for 30 seconds and pitch/start at 66 and rise to 69/70 ish.
NOTE 1: Really wanted to try Weyerman Dark Wheat Malt (6 to 8 L) (https://www.morebeer.com/products/weyermann-dark-wheat.html) but they are out of stock now.
NOTE 2: Normally just a 60 min Hallertau. However, I want to use NZ hops so I'm using Pacifica for bitter and some late flavor. Last brew was very good with 18 brewgr IBU as follows:
Pacifica 1 oz - 55 min
Hallertau Mitter .5 oz - 10 min
Pacifica .3 oz - flameout
(Only did 5 min Hop Stand last time.)
NOTE 3: Per last Dunkel Brew session results next time I had Wheat at 36 (def 40). I was .003 over so bump up to 38 this time.
