I am brewing this a little darker and higher gravity than I normally would, because I am blending it with a lighter beer that I have had aging in my whiskey barrel. The whiskey barrel beer does not have enough maltieness, so I am brewing this in order to kick it back up near trappist quad range.
The whiskey beer is 18 pounds of belgian pilsner, and 3 pounds light candi sugar.

Ha ha! I don't need much convincing.
This one turned out really well. While I was bottling, I added 1/2 pound of maltodextrin, because it was a bit thin. Glad I did, because I think it turned out really well. It's no Westie XII, but top notch for homebrew. Light oak and whiskey on the nose, with belgian fruit esters. Flavor is slightly sweet with lots of raisin and belgian spice. Mouthfeel is very smooth with crisp carbonation. Very happy with this one.
