Mash Steps

Special Instructions

Strike water temp 163F

Mash target temperature 150F for 60 minutes, last 10 minutes add the rest the chocolate malt and roasted barley

Batch Sparge 170F
4.
Boil 60 minutes with hop additions, last 15 minutes add Irish moss, 1/2 clarifying tablet and last 10 minutes add cold steep
5.
Wort chill to 70F
6.
Aerate and pitch yeast in carboy
7.
Primary ferment for 2 weeks @ 60-72F
8.
Rack to secondary, add rum barrel chips, cocoa nibs, vanilla beans and toasted coconut. Taste and adjust after 4 days
9.
Secondary age for 4 weeks
10.
Bottle condition with 4oz corn sugar
