I want to make a resinous, piney hop beer as I'm a little frustrated I haven't been able to achieve that flavor yet. All the pales and IPAs that I make seem to be very fruit juice oriented, which isn't bad but it's not the flavor I want. I like the Imperial Dry Hop yeast for its tangy nature to offset the piney flavor a bit, plus I have some slurry in the fridge and it will help save money. I cloned this from my fresh hop pale ale since that beer is a really good base for featuring hops. Regarding the hops, I purchased some Simcoe cryo hops and I intend on making a paste with half an ounce and adding that to the bottling bucket for half the beer. I'm going with a new malt, gold rush pale ale, for the base malt for flavor and color and then honey malt for flavor to accentuate hops. Efficiency was so low due to bad crush from mill at the brew store, so beware of the Catalina mill at FH Steinbart in Portland OR. I added light DME due to poor efficiency in order to add points, but would leave this off in the future. The grain bill sans DME should be able to support 8 gallons in the tank assuming proper conversion. After reading Water by Palmer and Kaminski, I set my profile to 4:1 Sulfate to Chloride: Ca 100ppm, Mg 8ppm, Na 40ppm, SO4 200ppm, Cl 50ppm, HCO3 20ppm

Notes:

Pours dark orange with half a finger of foam that mostly dissipates. Aroma is floral, fruity yeast, and sweetness. Flavor is floral citrus followed by a fairly stiff bitterness that really lingers, but not overbearing. There a notes of bready yeast, but slight. Mouth feel is ever so slightly chewy and carbonation is on the lighter side, so there's not much CO2 sharpness. Overall a really good pale ale despite all the issues with the brew itself. I'm
