Special Instructions

1.
Brewing water: 1/2 cold tap, 1/2 distilled.
2.
Cold steep "dark" grains (B, choc rye and 'nite wheat) for 24 hours in 3/4 gallon. Pasturize 30 min at 170F.
3.
Mash glucan/protien rest 120F, 30 min flaked rye with 1lb "light" grains then combine with rest of mash at 155F
4.
Add chilled "dark" wort to cool boil to 170F to pasturize, add last Hersbruker ounce
5.
Cool boiled wort with 1.5 gal sterile ice.
