3.pitched brett-c @ 72 degrees w/black cherries @ 6th day
4.gravity reading w/brett @ 1wk is down to 1.006. will bottle when its 1.003
looks like a rose style light wine. awesome kriek aromas that blend with brett c. they compliment each other nicely nice medium tartness with a super dry finish. the cherries are present, light malt presence, and a good presentation of sour charateristics. makes you pucker slightly..just how i like it. super dry, almost no mouthfeel. but it resets your palate quite well. would be perfect to pair with seafood. i'll do better next time around. but for my first sour i am pleased.
