Special Instructions

1.
Grate sweet potatoes.
2.
Add all the adjuncts in water with 320g of the mixed malt
3.
Mixture should be runny.
4.
Heat mixture to 50C, close pot, turn off fire and hold 15mins
5.
Turn on fire and heat to 65C. Flame off. Cover pot and hold 15mins.
6.
Turn on fire and boil the mini mash for 30 minutes
7.
Heat separate kettle to mash temp 65C, add remaining malt and mash
8.
Add water to mini mash to cool down to 65C.
9.
Combine mini mash with main mash for 90minutes
10.
Boil 90 minutes add hops after 30mins. Chill to 20C and pitch.
