  2. mash pH - 5.5 @ room temp
  3. 1:1.5 Sulfate/Chloride ratio
  4. Chilled to 56 F
  5. Aerated w/ aquarium pump, 45 min
  6. pitched .75 cups yeast slurry
  7. Ferment 1 month in primary at 56F
  8. Rack to keg w/ biofine, carbonate over night, drink.

Notes:

This beer turned out very well. Aroma has a small amount of grass/hay type hoppiness, with rich honey and caramel notes. Also a bit of fruity fermentation character, not super estery but very subtle, (raisins, red apple.) Flavor is deep rich maltiness, some more fruity fermentation character, and a bit of cocoa. Body is light but with enough mouth feel to keep it interesting, definitely not thin. Will definitely brew this again.
