Special Instructions

Collect 1.5 gallons of distilled water.
2.
Heat water to 160°.
3.
Add steeping grains, cover and let sit for 20 minutes, then remove..
4.
Bring wort to boil, then flame out and add DME.
5.
Since this is only a 15 minute boil, you could place wort-chiller in brew-pot but leave unconnected for now. However, since this brew day will be on an induction burner, we will postpone this step.
6.
Return wort to a boil and watch for hot break (if any) and wait for it to pass before next step.
7.
Add Columbus hops (15 minutes).
8.
Add Whirlfloc tablet (10 minutes).
9.
Add Amarillo hops (5 minutes).
10.
Add Cascade hops (FLAME OUT).
11.
Place wort chiller in brew kettle and wait ten minutes. Connect and chill to 80° - 85°.
12.
Add wort to fermenter and top up to 2 gallons with cold water.
13.
Pitch yeast between 65° - 75°.
14.
On day 7 of fermentation, rinse and sanitize mesh strainer bag. Add Mosaic hops to bag and place in fermenter.
15.
On day 14 - bottle! Add 2 oz Corn Sugar to 6.4 oz distilled water and bring to boil. Flame out after about 30 seconds and let cool while you get your bottles rinsed, sanitized and ready for filling..
16.
Gently stir priming solution into wort - OR - skip steps #15 and #16 and use Carbonation Drops or Priming Tablets.
