1.Added 1 LB of frozen whole cherries for primary.
2.Rack onto 1 OZ boiled oak cubes for secondary after 8 Days
Bottling Day - Fresh off the tap was a good chocolate / cherry / oak nose. The flavor profile followed that, maybe a little heavy on the oak. Could be the low mash or gypsum added, but the oak felt a little too prominent and flavors a little to sharp & crisp. Going to exclude the gypsum and mash 2 deg higher for the next batch. Poor head retention, adding chocolate at the beginning of boil next time. Overall a pretty enjoyable porter for my first batch, no off flavors just need to develop the recipe. I have bottled a few for aging both in the keezer and out, hope to see how the flavors mellow over the next few months
One of my favorite beers yet. Great flavor, and still young. hope to see additional melding of flavors throughout the next few months. Going to bottle a few when carbonation is dialed in to store.
Possibly a bit thin, might try a 151 - 152 mash next time with the Chico yeast.
