Adjusted from tim's blueberry wheat monster recipe. Added orange zest and lemon juice and a bit of honey to the end of boil. Also swapped in german inspired Tettnang hops to add a European twist to compliment the hefe yeast used with this wheat brew which should produce a minimally bitter product with citrus undertones.
All but the slightest hint of orange nose has disappeared. No orange flavor is detectable: just a well balanced wheat beer remains. Has a bit of caramel color and some actual body even with amped up carbonation in the bottle (more color and body than your average wheat beer). Very mild wheat flavor adds a nice touch without overpowering. Very refreshing and drinkable. Would brew again with more orange zest (perhaps in secondary) and swap the munich for a bit more wheat.
Turned out to be a surprisingly great brew. Rubbing alcohol flavor completely disappeared. Will brew again when oranges are in season. That little bit of extra priming sugar made this nice and bubbly. just a hint of orange after a couple weeks of conditioning. No need to change the recipe, but could use a bit more orange zest and it wouldn't be overpowering (I didn't get much more than 1.5 oz from my bag of small oranges available in early Aug).
sampled as bottled. not sure why this fermented to such a low FG at 1.004. has a strong rubbing alcohol odor and flavor. hoping it mellows with some conditioning. otherwise, very subtle orange/citrus hints with dry, yet some remaining sweetness as an aftertaste. surprised how little the wheat added to the flavor profile. Decent lighter brew with some hoppiness.
took a gravity sample (1.022). lots of great smelling yeast floating on top, still working. sampled from midway down the fermenter and stole a taste while taking a reading. Great wheat flavor, subtle citrus (by no means over fruity). I have a feeling this is going to be a good one!
