There are several recipes that purport to be clones of Innis and Gunn but they miss the point. Innis and Gunn is a strong Scottish Ale which weighs in at 7.2% ABV. There are too many insipid versions of this so I call this a copy and not a clone.

Special Instructions

1.
Take the first 2.5 litres of the runnings and boil it down to about 0.65 litres. Add this to the boil.
2.
Ferment for 1 month, then transfer to secondary.
3.
Boil 28g of medium toasted american oak chips for 10 minutes.
4.
Add the boiled oak chips and let it sit for 12 days.
5.
Bottle!
