Mash Steps

Special Instructions

1.
Heat 3 gallons of water to 165 degrees, mash grains and steep at 152 for 90 minutes.
2.
Sparge with 6 gallons of water heated to 178 degrees to obtain boil starting volume of 7.4 gallons.
3.
Bring to a boil and add Williamette Bittering Hops. Boil for 90 Minutes.
4.
Add Honey after 30 minutes stirring to ensure it doesnt scorch.
5.
Add Hallertau hops at five minutes remianing. At flame out let stand for 15 minutes.
6.
Cool to 68 degrees and pitch Yeast. Ferment at 65 degrees for 3 weeks. Transfer to secondary for 2-3 weeks more before kegging.

Notes:

So first pull on the keg tonight and so far so good. Has a dark brown color, a smooth finish, clean mouthfeel and a nice head. Honey nose. Chocolate more then Coffee, and mellowed even further by the buckwheat honey flavored finish. I think it's a winner!! And it will get better with time.
