Water chemistry: 2.0 g CaSO4, 4.0 g CaCl, 0.8 g NaHCO3, 2.0 g MgSO4, 0.9 g Na, 1 ml lactic acid

Adjust pre-mash water pH = 5.9

Mid-mash pH should be roughly 5.3 to 5.5 (Actual 5.5).
