Special Instructions

1.
Water chemistry 6.5 gallons: 3g gypsum, 5g CaCl, 1g NaHCO3, 3g Mg
2.
Pre-mash pH = 6.0 ... adjust with ascorbic or citric acid as necessary.
3.
6.5 gal strike water at 155 F -> mash at 152 F for 60 minutes.
4.
Sparge with 170 F water to 7.0 gal.
5.
60 min boil with hop additions as above.
