Special Instructions
1.Water chemistry for 8.5 gal: 4.0 g gypsum, 8.0 g calcium chloride.
2.Water chemistry for 8.5 gal: 6.0 g magnesium, 4.0 g Kosher salt.
3.Water chemistry for 8.5 gal: 2.7 g of ascorbic acid.
4.Water chemistry for 8.5 gal: Enough calcium carbonate to get pH = 6.0 in pre-grain water.
5.Mash in grain at a strike temp of 152 F to get 148 F and hold for 60 min.
6.Mid-mash pH should be roughly 5.2 to 5.4
7.60 minute boil with hop additions as above. 220 V mode on the Anvil.
