Special Instructions

1.
Water chemistry for 8 gal: 4.0 grams gypsum, 8.0 grams calcium chloride.
2.
Water chemistry for 8 gal: 6.0 grams magnesium, 2.0 grams Kosher salt.
3.
Water chemistry for 8 gal: 1.7 grams of ascorbic acid.
4.
Water chemistry for 8 gal: Enough calcium carbonate to get pH = 6.0 in pre-grain water.
5.
Mash in grain at a strike temp of 153 F to get 150 F and hold for 60 min.
6.
Mid-mash pH should be roughly 5.2 to 5.4
7.
30 minute boil with hop additions as above. 220 V mode on the Anvil.
8.
Pitch a 1.5 litre starter of Saflager W-34/70
