We didn't use a cover for the boil. Hop addition was supposed to be Summit - Galaxy - Simcoe - Galaxy - Simcoe. Instead used Amarillo because we forgot the simcoe.

 Water Infusion  Mash/Boil  Fermentation  Conditioning
Added Oats 10 minutes after mash started Added Maple Syrup 10 minutes before flame out Added .5lbs of maple syrup 4 days in to fermentation Fermented at 62 degrees for 4 days and finishing fermentation at 63-65 degrees.
